— INGREDIENTS —
2 Garlic cloves
50g Chopped Chorizo
1 Tin Napolina chopped tomatoes
1 Vegetable stock cube
Salt (to season)
1/2 tsp Chilli powder
1 tbsp Oregano
1 tbsp Tomato puree
Handful Fresh basil
Pasta (to serve)
— DIRECTIONS —
1. Peel and finely chop the onion and garlic.
2. De-seed the pepper and chop into small pieces.
3. Heat some oil in a medium sized saucepan on the stove then fry the onion, garlic, pepper and chorizo for 5-10 minutes.
4.Add the tinned tomatoes, a pinch of salt, chilli powder, oregano, tomato puree and crumble in the stock cube.
5.Stir everything together and top the sauce up with boiling water if it’s too thick.
6.Leave to simmer for 10-15 minutes and prepare the pasta in the meantime.
7. When the sauce has finished simmering and thickened, check for seasoning then stir in a handful of basil.
8.Serve the tomato sauce with the cooked pasta, garnish with basil and enjoy.
