Chicken with Lemon & Garlic
— DIRECTIONS —
1. Slice the chicken breast thinly across its width.
2. Heat the oil in a pan over a medium heat. Add the onion and cook for 5 minutes to soften.
3. Add the garlic and cook for a further 30 seconds.
4. Add the chicken and cook for around 10 minutes until the chicken is lightly browned.
5.Add the juice and rind of the lemon, turn the heat down a little and deglaze the pan.
6. Add the parsley, season well, mix and serve.
